Corned Beef Dinner

  • 4½lb corned beef
  • 1 cup water
  • 1 cup apricot jam
  • 4 tbsp brown sugar
  • 2 tbsp soy sauce
  1. Add the piece of corned beef and the water to a glass baking dish with sides. Cover securely with foil and cook in a 350 degree oven for 2½ -3 hours and remove from oven for glazing
  2. Mix apricot jam, brown sugar and soy sauce together and cover the meat with ¼ of the mixture
  3. Cook uncovered for 10 minutes
  4. Remove and add another ¼ of the glaze to the meat and return to the oven for 10 more minutes, repeat once more
  5. If the meat is is cooked to your desired tenderness you can remove it and allow it to rest of 5-10 minutes, if not, glaze and cook for 5 more minutes - keep an eye on it as to not burn the glaze.
